Fruity Tofu Cooler Source: the Ontario Soybean Growers Marketing Board Yield: 2 (125 ml) servings
3/4 cup white grape juice 1 teaspoon sweetener 2 ounce silken tofu, rinse and drain 1/2 cup whole strawberries 2 each ice cubes
In a blender, combine the grape juice, sweetener, tofu and fruit. Blend for 30 seconds. Add the ice and blend until frothy.
VARIATIONS: Replace the strawberries with one of the following: 1/2 banana 1/4 cup blueberries 1/2 fresh mango 1/2 fresh peach
