I saw my husbands aunt make it like this one time and my family has liked it better this way ever since. This is a good recipe even for people who aren't really fond of olives (like me).
Potato Salad
5 lbs. potatoes, washed, peeled, cubed 1 medium onion, chopped 3 eggs, hard boiled and diced Approximately 15 whole stuffed olives, drain & slice Mayonnaise (to bind) Mustard (to taste) Salt & Pepper to taste
Boil potatoes until tender, but not mushy. Drain really well and allow to cool slightly. Add chopped onion, eggs, olives. Toss gently. Add mustard (I usually add about 2 Tbsp. or so) and add enough Mayonaise to bind it all together. I like this best while it is still fresh and still a little warm. Enjoy!
