Crispy Oven-Fried Chicken
6 boneless, skinless chicken breast halves 1/3 cup all-purpose flour 2 egg whites, lightly beaten 1 cup cornflake crumbs
Preheat the oven to 375 degrees. Lightly coat a baking sheet with nonstick spray. Set aside.
To coat the chicken, first roll the breast halves in the flour to evenly cover all sides. Then dip the chicken in the egg whites and roll in the cornflake crumbs.
Place the coated chicken pieces on the prepared baking sheet. Bake or 20 to 30 minutes, or until tender and no longer pink. (Do not turn the chicken over during baking)
