Baby Hamburgers on Cocktail Buns

Cocktail Buns

Stir together:
1 Tbsp active dry yeast
1/4 cup warm water (110F)

Add:
2 tsp sugar
2 Tbsp butter
1 tsp salt

Add:
1 cup warmed milk (110F)
1 egg, beaten
3 1/2 cups all purpose flour

Mix well. Knead for 7-8 minutes. Place in greased bowl and let rise for 1 1/2 hours or until doubled in size.

Punch down. Shape into balls about the size of a walnut and place of greased baking sheet. Let rise until doubled in size.

Bake at 400F for 20 minutes.

Baby Hamburgers

1 lb ground beef
1 lb ground pork
1 envelope dry onion soup mix
2 eggs, well beaten
1 cup milk

Mix everything together in a large bowl. Beat with an electric mixer on high speed until light and fluffy.

Make patties about 1 1/2-nches in diameter and drop onto a lightly greased frying pan. Cook until done.

Slice each cocktail bun and put a hamburger in it. Serve warm.

Both of these can be done ahead and frozen.
