Turkey, Bacon and Caramelized Onion Wraps Source: Southern Living Annual Christmas Book Servings: 4
4 burrito-size flour tortillas 1 (6.5 ounce) tub Alouette light cheese spread caramelized onions (recipe below) 1 pound deli-style sliced fat-free smoked turkey 8 slices cooked bacon, chopped 1 bag spinach leaves, whole or European salad greens
Caramelized Onions: 2 cups chopped onions 1 tablespoon oil 1 tablespoon sugar 2 teaspoons balsamic vinegar fresh pepper to taste
To make caramelized onions: Heat olive oil. Add onions and sugar. Saute over med low to med until caramelized. This can take anywhere from 20-30 minutes, depending on how fast you cook your onions. Add vinegar and pepper. Makes about 1 cup.
Spread cheese spread on tortilla leaving 1/2 inch border. Add caramelized onions, turkey, bacon and greens. Roll.
