Mock Chocolate Tapioca Mousse (using cream of wheat)
1 1/4 cups skim milk 1/3 cup Regular, Quick or Instant Cream of Wheat Cereal 1/3 cup sugar 1/2 cup semisweet chocolate chips 2 ounces light cream cheese 1 tsp vanilla extract 2 1/2 cups prepared whipped topping Chocolate shavings, for garnish
In medium saucepan, over medium heat, heat milk to a boil. Slowly sprinkle in cereal. Cook and stir until thickened, about 2 minutes. Remove from heat; stir in sugar.
In food processor or electric blender container, blend cereal mixture, chips, cream cheese and vanilla until well combined; pour into large bowl and let stand 5 minutes.
Fold in 2 cups whipped topping. Cover; chill at least 2 hours. Serve topped with whipped topping and chocolate shavings if desired.
