Apricot Meatloaf (using corn flakes)
2 pounds ground chuck 1/2 cup crushed corn flakes cereal 1 (6 ounce) package dried apricot halves, chopped 2 large eggs, lightly beaten 1 1/2 tsp salt 1/8 tsp pepper 1/2 cup firmly packed brown sugar Combine first 6 ingredients in large bowl; stir well. Shape mixture into loaf and place in lightly greased loaf pan.
Bake, uncovered, at 350 degrees for 1 hour. Sprinkle brown sugar over meat loaf; bake an additional 10 minutes. Remove to serving platter.
