Pumpkin Bread
2 cups canned or cooked pumpkin 1 cup canola oil 3 cups sugar 4 eggs, beaten 3 1/4 cups unbleached Pillsbury or King Arthur all-purpose flour 1 tsp baking powder 1 tsp baking soda 1 tsp fresh ground cloves 1 tsp salt 1 tsp cinnamon 1 tsp Tones Ground Nutmeg
Preheat oven to 350F. Grease 2 loaf pans.
Mix pumpkin, canola oil, sugar, and eggs in a large mixing bowl.
Combine flour, baking powder and seasonings. While mixing, add the flour mixture a little at a time into pumpkin mixture. Pour into the two greased loaf pans.
Bake for 1 hour or until done. Makes 2 loaves
