Baked Brie with Cheddar, Port and Walnuts
Brie is a soft-ripened, creamy cheese with edible white rind and a flavor that becomes stronger as cheese ages.
8 oz. Real California Brie Wheel 2 oz. (1/2 cup) Real California Cheddar cheese 2 tablespoons port wine 2 oz. chopped, toasted walnuts 1 tablespoon honey
Instructions: Cut Brie in half horizontally; reserve. Finely shred Cheddar and mix with Port. Spread Cheddar mixture over bottom piece of Brie. Put top half of Brie on Cheddar mixture; reserve. Mix nuts and honey; cover Brie with mixture. Bake at 500° F until Brie is just warm and soft to touch, about 5 minutes.
Serving Ideas This recipe is delicious paired with melons, grapes, cranberries or sun-dried tomatoes and very well-paired with smoked salmon and dill.
Wine Pairing Ideas A full-bodied red wine goes well with this cheese, especially a Cabernet Sauvignon and bigger Pinot Noirs. A sparkling wine or champagne compliments it nicely too.
