Shrimp Cocktail Pasta Salad
8 ounces Dakota Growers Elbow Macaroni 3/4 pound cooked shrimp, imitation crab or combination 1 1/4 cups sliced celery 1 bunch green onions, sliced diagonally 1 avocado, peeled, pitted and diced
Dressing: 1/2 cup ketchup 1 cup mayonnaise 3/4 teaspoon salt 1/8 teaspoon cayenne pepper 2 tablespoons lemon juice 1 tablespoon horseradish
Cook pasta according to package instructions. Rinse in cold water.
In large bowl, combine pasta with seafood, celery, green onions and avocado.
Combine dressing ingredients. Mix well. Fold into pasta mixture.
Chill one hour before serving. If prepared in advance, add avocado just before serving.
