Chocolate Pancakes with Warm Chocolate Sauce
For Pancakes: 2 cups complete (ie: 'just add water') buttermilk pancake mix 1 1/2 cups water 1/4 cup unsweetened cocoa
For Chocolate Sauce: 1/2 cup heavy cream 1/2 cup semi-sweet chocolate chips
For pancakes: In a large bowl, combine pancake mix and water; stir until smooth. Stir in cocoa.
Heat a large greased, non-stick skillet over medium-high heat.
For each pancake, pour about 1/3 cup of batter in pan. Cook until breaking bubbles appear all over the surface, 10 to 15 seconds then flip to cook other side about 10-15 seconds. Serve with warm chocolate sauce.
Makes 8 pancakes (about 4 inches each), or 4 servings.
For Chocolate Sauce (makes about 1 cup): In a small saucepan over medium heat, bring heavy cream to a boil. (Keep an eye on it so it doesn’t boil over.)Pour hot cream over chocolate chips in a small bowl. Stir until smooth.
