Imitation Crabmeat Au Gratin rec.food.recipes/JRobin Lowe/2001
Here is a recipe that my husband enjoys. It’s quick, inexpensive and very tasty.
1 cup chopped onion 1/2 cup chopped bell pepper 1/4 lb margarine 1/4 cup flour 1 (13 oz) can evaporated milk 2 egg yolks 1 lb imitation crabmeat 1/2 lb shredded cheddar cheese 1 tsp Cajun spice seasoning (or more depending on how spicy you like)
Saute onion and bell pepper in margarine. Blend in flour to onion mixture.
Stir milk in gradually. Add egg yolks, stirring until mixed well. Add Cajun spice and cook five minutes.
Tear up crabmeat until it is bite sized pieces and layer across bottom of a greased casserole (at least 2 quarts), although I tend to use an oval shaped casserole dish. Pour cooked sauce over crabmeat and sprinkle cheese on top.
Bake at 375 degrees for 10-15 minutes.
Serve over rice or fettucine noodles, if preferred.
