Strawberry Brulee
Red berries (strawberries, raspberries etc) Caster sugar 1 heaped dessert spoon of Creamy White Stilton with Strawberries, crumbled 2 dessert spoons Greek yoghurt 2 teaspoons demerara sugar Mint leaves to decorate
Fill the base of a fruit dish or wine glass with red berries of your choice and dredge with sugar. Cream together 1 heaped dessert spoon of crumbled Creamy White Stilton with Strawberries and 2 dessert spoons of Greek yoghurt. Pile on top of fruit and smooth. Cover surface with 2 heaped teaspoons of demerara sugar and press lightly with the back of a spoon. Decorate with some remaining soft fruit and mint leaves. Chill for a minimum of 30 minutes before serving.
Demerera Sugar is yellowish brown sugar crystals rolling with the rich aroma of tropical sugarcane molasses. It consists of medium to large sugar crystals enveloped in a thin film of molasses syrup containing strong natural flavor and color components. It has a color band ranging from @ 8,000 - 11,000 ICUMSA. Produced by a precise co-crystallization process to provide consistent flavor and color profiles, and smooth texture, it has moist fine crystals (which are slightly sticky).
