Delicious Eggs Servings 12-12
6 cups (1-1/2 pounds) shredded Montery Jack cheese 3/4 pound fresh mushrooms, sliced 1 small onion, chopped 1/4 cup butter or margarine, melted 1 cup cubed cooked ham 7 eggs, beaten 1 3/4 cups milk 1/2 cup all-purpose flour 1 tablespoon seasoned salt 1 tablespoon chopped fresh parsley
Place half of cheese in a buttered 13x9x2-inch baking dish. Saute mushrooms and onion in 1/4 cup butter in a large skillet until tender; spoon vegetable mixture over cheese. Sprinkle ham over vegetable mixture; top with remaining cheese. Combine eggs, milk, flour, seasoned salt, and chopped parsley; beat well. Pour egg mixture evenly over cheese. Bake at 350 F for 45 minutes or until set.
