Whiskey Steak: Serves 2
2 (1-inch) thick rib-eye or tenderloin steaks 2 Tbls. butter or margarine 3 Tbls. orange juice 1 small red onion,sliced 1 Tbls. Worcestershire sauce 1 Tbls. Dijon-style mustard 1/2 tsp. grated orange peel salt & freshly ground black pepper 2-3 Tbls. whiskEy
Flatten steaks with heel of hand or a heavy spatula.(Do not pound with a tenderizing mallet.)
Heat butter in a medium skillet,brown meat quickly on both sides. Remove & keep warm.Add orange juice, onion, Worcestershire sauce, mustard & peel to pan, cook & stir till well blended.
Return steaks to pan & cook 2 minutes per side. Remove steaks. Add whisky to pan, heat & spoon over steaks. Serve immediately.
