Stuffed Pork Chops: Serves 4
2 Tbls.diced smoked bacon 1/2 c.finely chopped onion 1/2 c.finely chopped tart apple 2 garlic cloves, minced 4 c.chopped spinach,lightly packed 1 Tbls.apple cider vinegar 1 Tbls.sugar 1/4 tsp.salt 4 thick pork chops salt & pepper 2-4 Tbls.vegetable oil hot water
Cook bacon,onion,apple & garlic together til tender & lightly browned.Add spinach,cook & stir till wilted.Add vinegar,sugar & salt to taste,cover & simmer for 5 minutes.Set aside.
Cut a pocket into each chop & fill with spinach stuffing.Season with salt & pepper.Heat 2 Tbls. oil in large heavy skillet.Brown chops 5-7 minutes on each side,adding oil if needed.Pour off excess fat.
Chops may be baked in skillet if it is large enough & oven-proof.Otherwise,arrange chops in a 13 x 9 " baking dish,pour 1/4" hot water around chops.Bake in a 350 degree oven for 1 hour.
