Beer Batter Fried Onion Rings: Serves 4-6
1 c.all purpose flour 1 tsp. salt 1 (12oz.)can light beer 1/4-1/2 tsp.red or green Tabasco sauce 3 large Spanish onions* Flour Vegetable oil
Combine flour,salt & beer,let stand till light & bubbly.Add Tabasco sauce & let stand several hours or overnight.
Cut onions into 1/2" slices,separate into rings.Dip in flour,into beer batter & then in flour again.
Heat at least 1" oil in a large pot or deep fryer(375 degrees).Fry battered onions,a few at a time,till golden brown,about 2 minutes,turning once.
*Note: Mushrooms,peppers or other vegetables may be fried as directed.
