Gingerbread Muffins Source: Elizabeth Powell Makes 12
1 cup margarine 1/2 cup brown sugar 4 eggs 2 1/2 cups all-purpose flour 1 cup molasses 2 teaspoons cinnamon 2 teaspoons baking soda 1 cup buttermilk 2 teaspoons ground ginger 2 cups whole-wheat flour 1 cup seedless raisins
Cream margarine and sugar. Add eggs, one at a time, beating after each. Add molasses. Sift flours, baking soda, and spices. Add alternately with buttermilk. Stir in raisins.
Fill greased muffin pans 2/3 full and bake at 350 F for 15 minutes.
