Zesty Roasted Chicken and Potatoes
6 boneless chicken breast halves 1-lb. small red potatoes cut into quarters 1/3 cup mayonnaise 3 Tbsp Dijon mustard 1/2 tsp. pepper 2 cloves garlic, crushed Chopped fresh chives (optional)
Heat oven to 350 degrees. Grease a 15-1/2x10-1/2x1-inch jellyroll pan.
Place chicken and potatoes in pan.
Mix mayonnaise, mustard, pepper, garlic and chives. Brush over chicken and potatoes.
Bake uncovered 30-35 minutes or until potatoes are tender and juices run clear when centers of thickest pieces are cut. Sprinkle with chives and serve.
