Banana Bread (Pan de Guineo)
3 very ripe bananas 1/2 cup sugar 1/2 cup (1 stick) butter 3 eggs 1/2 teaspoon salt 2 cups all-purpose flour 1 teaspoon baking powder combined with 2 tablespoons sour cream butter to grease pan Preheat the oven to 350 F.
In a large bowl, mash the bananas. Add the sugar, butter, and eggs. Beat until well blended.
In a separate bowl, sift the salt and flour together. Combine with the banana mixture. Add the baking powder-sour cream mix.
Grease an 8-inch pan and pour the batter into it. Bake for 30 minutes, or until a toothpick inserted in the center comes out clean.
