MACADMIA NUT CRUSTED HALIBUT WITH BANANA BUTTER
2 (7 oz.) portions fresh halibut 2 tablespoons, finely chopped macadamia nuts 1 tablespoon all purpose flour 1/2 cup, finely chopped bread crumbs 3 tablespoons olive oil salt and pepper to taste
BANANA BUTTER: 2 freshly sliced bananas 1 teaspoon pernod 1 tablespoon olive oil 3 tablespoons crème de banana liqueur 1/4 cup heavy cream 4 tablespoons butter
Make macadamia crust a few days ahead of time, it will dry out the macadamia nut. To make crust use nuts, bread crumbs and flour. You want a real light crust.
Saute crusted halibut in saute pan for about 1 1/2 to 2 minutes. On one side, flip and place in oven for 4 to 7 minutes. Until done.
Place a pool of banana butter on plate, place halibut on top. Serve with your choice of starch and vegetable. Garnish with banana chips.
BANANA BUTTER: Saute bananas in olive oil for 2 minutes.
Add liquor and reduce by half. Make sure to stir, so that it doesn't burn.
Add cream. Simmer for 10-15 minutes. Remove from heat. Slowly add butter.
