Turkey Sausage Patties alt.support.diabetes/Jak/2002
1 slightly beaten egg (or egg white) 1/3 cup finely chopped onion 1/2 cup finely chopped fresh red Delicious apple 1/4 cup seasoned bread crumbs 2 Tbsp. snipped fresh parsley 1/2 tsp. salt 1/2 tsp. ground sage 1/4 tsp. ground nutmeg 1/4 tsp. black pepper 1/8 tsp. cayenne pepper 1/2 lb. ground turkey, chicken (can be mixed half and half with lean ground beef)
In a medium size mixing bowl, combine the egg or egg white, onion, apple, bread crumbs, parsley, salt, sage, nutmeg, pepper and cayenne. Add the ground meat and mix well. Shape the mixture into eight or nine 2-inch wide patties. Cook in skillet or on griddle for 15 minutes or until juices run clear and middle is no longer pink.
