Sweet Chicken Wings in Oyster Sauce

1 lb chicken wings
3 tablespoons oyster sauce
1 tablespoon light soy sauce
1/2 pint chicken stock
Pinch of salt
1 teaspoon soft brown sugar
1 oz fresh root ginger, finely chopped
Pinch of black pepper
1 teaspoon coarse sea salt

Put chicken wings into a wok with just sufficient water to cover. Bring to the boil, cover and simmer for 10 minutes. Drain and discard the water.

Place chicken wings back into the wok and add the oyster sauce, soy sauce, stock, salt and sugar. Bring slowly to the boil, cover and simmer for 20 minutes.

Transfer to a warmed serving dish and sprinkle with the ginger, black pepper and coarse sea salt.
