Home Made Potato Soup (crock pot) rec.food.cooking/Julie Lucas/1998
I have found this crock pot recipe to be a family favorite here, better than any potato soup I have ever tasted.
6 potatoes, peeled and cut into bite size pieces 2 leeks, cut in bite size pieces 2 onions, chopped 1 carrot, pared and diced 1 stalk celery, sliced 4 chicken bouillon cubes 1 tbsp. parsley flakes 5 cups water 1 tbsp. salt pepper 1/3 cup butter 1 (13 oz.) can evaporated milk chopped chives
Put all ingredients except evaporated milk and chives in pot. Cover and cook on Low 10-12 hours or High 3 to 4 hours. Stir in evaporated milk during last hour. If desired, mash potatoes with masher before serving (I do not mash them). Serve topped with chopped chives.
