The greatest waffle recipe I know of. These are very light and crispy (from the milk) and I think closely approximates those from Fat Apples in Berkeley, California ? where the waffles are undoubtedly the best on the planet.
1 3/4 cups flour 1 tbsp. baking powder pinch salt 1 tbsp sugar 2 cups milk 3 eggs, separated 6 tbsp melted butter cream of tartar
Get that waffle iron really hot.
Mix flour, baking powder, salt and sugar, add milk, egg yolks and melted butter. Mix until very smooth. I use a KitchenAid for about 5 minutes.
While mixing, beat egg whites with a bit of cream of tartar. I do it in my food processor while the KitchenAid is working.
Fold the egg whites into the batter, LIGHTLY.
Cook the regular way on the waffle iron.
