Herb Pesto Source: The Herb Companion Yield: 2 to 2 1/2 cup
LIASON HERBS 1/2 cup Parsley
MILD HERBS 1 1/2 cups total: Lemon basil Sweet basil Marjoram Dill Lemon thyme
STRONG HERBS Half cup total: Rosemary Sage Tarragon Thyme Cinnamon or licorice basil
OTHER HERBS 2 or more cloves garlic 1/4 cup Nuts 1/2 cup Parmesan or Romano cheese, grated salt to taste AND 1/4 cup total: Spices Dried mushrooms or tomatoes Olives or chiles Herbal seeds Citrus peel
1/2 cup vegetable or extra-virgin olive oil
Choose as many ingredients as you like from each category. Remove any woody stems from fresh herbs.
Use fresh herbs. Combine ingredients with 1/2 cup vegetable or extra-virgin olive oil in a food processor or blender and chop finely.
Store in small airtight containers for up to 2 weeks or up to 2 years in the freezer.
