Garlic Croutons
Source: Silver Palate Good Times Cookbook
Makes 3 cups

Slow cooking and lots of tossing is the secret to these crispy croutons.

3 tablespoons unsalted butter
3 tablespoons mild olive oil
3 cups stale bread cubes, cut in 1/2 inch cubes
2 large cloves garlic, minced
1 teaspoon mixed salad herbs (parsley, chives, tarragon, and chervil)
3 tablespoons grated parmesan cheese

Heat the butter and oil in a large non stick skillet over medium-high heat. Add the bread cubes and cook, tossing constantly with a wooden spoon for 3 to 4 minutes. Reduce heat to medium low.

Add the garlic and salad herbs. Continue to cook the croutons, tossing frequently, until golden brown, 20 to 25 minutes.

Remove to a bowl and toss with the Parmesan. Store in an airtight container until ready to use.
