1/4 cup golden raisins 1/4 cup dried apricots, diced 5 cups water 2 cups cooked wild rice 2 cups cooked brown rice 6 tablespoons chives, finely chopped 6 fresh plums, sliced 1/4 cup pecans, optional 1/4 cup lemon juice 3/4 teaspoon Dijon mustard 3/4 teaspoon honey 1/3 cup olive oil 1/2 teaspoon ground coriander 1/4 teaspoon black pepper
Plump raisins and apricots in hot water and cover 10 minutes. Drain.
Combine cooked rice, raisins, apricots, chives and plums. If desired, toss with dressing and garnish with pecans.
DRESSING: Combine: 1/4 cup fresh lemon juice 3/4 teaspoon Dijon-style mustard 3/4 teaspoon honey Slowly add, blending constantly: 1/3 cup olive oil, Add: 1/2 teaspoon ground coriander 1/4 teaspoon pepper Mix well.
