Fluffy Mashed Sweet Potatoes (bananas, prune juice, honey) Source: Vegetarian Times, December, 1993 Yield: 6 servings
2 cups cooked, mashed sweet potatoes 3 bananas, mashed 1 1/2 cups soy milk 1/2 cup prune juice 3 tbsp honey 1 tsp allspice 2 tsp chopped candied ginger
Preheat oven to 375F.
Combine all ingredients except ginger & beat till fluffy. Pour into greased casserole and bake 50 to 60 minutes.
Sprinkle with candied ginger. Serve as a side dish or sweet enough to serve as a dessert.
