Argentine Grilled Steak
4 lb sirloin steak, abt 2-inches thick
MARINADE 1/4 cup red wine 1/4 cup red wine vinegar 2 tbl olive oil 1 tsp chopped fresh rosemary (or 1/2 tspn dried rosemary) 1/4 tsp freshly-ground black pepper
SAUCE 1/2 lb fresh mushrooms 2 tbl olive oil 1/3 cup water 3 tbl store-bought steak sauce 2 tbl red wine 1/4 tsp paprika Trim steak of fat. Marinate in mixture of wine, vinegar, oil, rosemary and pepper, one hour, at room temperature, turning two or three times. Heat barbecue. Remove steak from marinade and salt to taste. Grill steak over medium-high heat until done - about 8 minutes on each side for medium. Let sit five minutes and cut into 1/4-inch-thick slices.
For sauce, slice mushrooms and saute in the oil until tender. Add remaining ingredients to pan and reduce about 3 minutes. Serve hot with sliced steak.
