Beef Quesadillas
1/2 pound lean ground beef or 6 ounces thinly sliced deli roast beef 1 cup shredded Cheddar cheese 1/2 cup thick Taco sauce or chunky salsa 4 flour tortillas (7-inch)
Brown ground beef in skillet over medium heat 8 to 10 minutes or until beef is no longer pink. Pour off drippings and rinse, if desired.*
Sprinkle 1 tablespoon cheese on one side of each tortilla. Divide beef equally and arrange on top of cheese. Spread with 1 to 2 tablespoons taco sauce or salsa and top with 1 tablespoon cheese. Fold tortillas over in half.
Heat skillet over medium heat for 5 minutes. Heat two quesadillas in ungreased skillet for 2 to 2-1/2 minutes, turning once. Tortilla should be lightly brown. Repeat with remaining quesadillas.
**Rinsing Ground Beef
Rinsing cooked, crumbled ground beef with hot tap water is a simple way to reduce fat by 50%.
1. Brown ground beef in skillet over medium heat, stirring until no pink color remains. 2. Pour off any fat. 3. Place crumbled beef (and onions, etc.) in strainer or colander over bowl. 4. Rinse with 1 quart hot tap water. 5. Let drain several minutes, stirring once. 6. Proceed as recipe directs.
