Zucchini Fries
2 thin zucchini (1-inch diameter) 1/2 tsp oil 2 thin yellow squash (1-inch diameter) 1 tsp basil, fresh minced
Cut the zucchini and squash into fried about 2-inches long and 1/2-inch thick.
In a large no-stick frying pan over medium-high heat, saute the vegetables in the oil about 5 minutes, or until lightly browned. Sprinkle with the basil.
