Dreamy Orange Chicken
3 tablespoons unsalted butter 4 boneless skinless chicken breast halves -- trimmed 8 slices peeled oranges -- 1/4-inch thick 3/4 cup fresh orange juice 2 tablespoons grated orange zest 1/2 cup heavy whipping cream salt and white pepper -- to taste cayenne pepper -- to taste
Preheat oven to 250F.
Melt the butter in a large skillet over medium heat. Add the chicken breasts and saute until golden, about 3-4 minutes per side.
Add the orange slices and saute for a few minutes on each side. Remove from the pan and set aside. Add the orange juice and zest to the chicken; mix thoroughly. Continue cooking until the chicken breasts are tender, about 8-9 minutes. Remove chicken to a baking pan, cover, and place in the oven to keep warm.
Add the cream to the skillet and heat to boiling over high heat. Boil for 2-3 minutes, stirring to deglaze the pan. Add salt and white pepper to taste. Pour cream sauce into a gravy boat for serving.
Serve the chicken breasts with two sauteed orange slices on each piece. Pour cream sauce over the top, then sprinkle with cayenne pepper to taste.
