Sour Cream Pancakes
My great-aunt Fay's Sour Cream Pancakes were a favorite at great-uncle Edward's restaurant in Skokie, Illinois. The name is slightly misleading, since they contain more cottage cheese than sour cream. - Lou Warshawsky, 1982
Combine: 2 eggs 1 cup cottage cheese 1/2 cup sour cream 1/8 teaspoon salt (a pinch) 1/4 teaspoon cinnamon 1/2 cup flour 1/2 teaspoon vanilla
Fry in butter on both sides. Aunt Fay says they should be turned twice (fried again on the first side). I usually can't wait to sink my teeth into these delightful things, so I skip the second turning. It doesn't seem to make any difference.
Makes About 20 (3-inch) cakes
