Spicy Black Bean Burgers
2 (15 oz.) cans Black Beans, rinsed & drained 1/2 cup chopped Onion 1/2 cup finely chopped Parsley 4 Garlic cloves, minced 1 to 2 Jalapeno Peppers, seeded and minced 1/3 cup plus 6 Tbsp Flour, divided 1 1/2 tsp Ground Coriander 1 1/2 tsp Cumin 1/2 tsp Cayenne Pepper 1 Egg White, beaten 1/4 to 1/3 cup Bread Crumbs Combine beans, onion, parsley, garlic, jalapeno peppers, 1/3 cup flour,coriander, cumin & cayenne; mix in egg white. Coarsely mash into a thick chunky paste or process in food processor, using pulse. Mix in bread crumbs, if necessary, to make firm mixture. Refrigerate 1 to 2 hours for flavors to blend. Form into 6 patties, lightly coating with flour. Cook in sprayed skillet over medium heat 5 to 7 minutes on each side.
