Pineapple with Rum
2 cups pineapple, cubed 2 cups sugar 1 cup water 3 oz rum 2 Tbsp lemon or lime juice 1 tsp amaretto In a saucepan, combine sugar and water. Stir over low heat until sugar dissolves. Cool. Add rum, lemon or lime juice, and amaretto. Stir well. Dip pineapple in syrup. Serve syrup in partially scooped out pineapple shell.
