Angel Rolls
1/2 Tbsp. sugar 1 tsp. salt 2 Tbsp. butter 1 cup milk; scalded 1 cake yeast; proofed 1 egg; beaten 3 1/2 cups flour
Put sugar, butter and salt in a bowl, pour over the milk when just warm, add 1 cake of yeast that has been dissolved in 1/4 cup lukewarm water. Add egg and incorporate flour. Knead and let rise once.
Turn out on floured board and make into rolls the size of a walnut, let rise until double their bulk.
Bake in an oven 400F for 20 minutes.
