Spinach Quiche sans crust
1 package frozen chopped spinach 3 to 4 ounces grated fat free cheese or nondairy cheese-monteray Jack or cheddar style 2 cloves minced garlic (optional) 1/4 teaspoon freshly ground black pepper (optional)
Topping 6 egg whites 3/4 cup homemade bisquick (recipe to follow) 1 1/2 cups skim milk or plain soy milk
Thaw spinach and mix n garlic and pepper, if using. Sprinkle with cheese. Mix together topping ingredients and beat well. Pour over spinach cheese mixture and mix together. Pour into a pie plate lightly with pam style spray. Bake at 400F for 30 to 35 minutes.
Home made Bisquick (better than the commercial product)
9 cups flour (I use half whole wheat and half unbleached) 3/4 cup baking powder 1 cup plus 2 tablespoons dry milk (for nondairy, use Better than Milk-plain or soy powder) 4 teaspoons salt 1 3/4 cup applesauce
