They are delicate and crumbly, so a bit difficult to slice and handle, but they will just melt in your mouth. LEMON LOVE NOTES Source: Ladies Home Journal MagazineMakes 4 dozen cookies. 1 3/4 cups all-purpose flour 1/2 teaspoon salt 1 cup butter or margarine -- softened 1 cup confectioner's sugar 1 large egg 1 cup coconut 1 tablespoon grated lemon peel GLAZE 2 cups confectioner's sugar -- sifted 1/4 cup fresh lemon juice 1/3 cup coconut Preheat oven to 350. Grease 9x13 baking pan. Combine flour and salt in medium bowl. Beat butter with confectioner's sugar in large mixing bowl until light and fluffy. Beat in the egg. At low speed gradually beat in flour mixture until blended. Stir in coconut and lemon peel. Spread in prepared pan. Bake 30 minutes until deep golden brown. Make glaze by stirring confectioner's sugar and lemon juice in a bowl until smooth. Spread glaze over warm cookies in pan. Sprinkle with coconut. Cool completely and cut into 2-inch triangles.
