This Banana Bread is absolutely sinful. If you use the good quality butterscotch chips they melt into the batter and almost caramelize. The little bit of chocolate chips is my addition and I usually do add them.
Butterscotch Banana Bread Source: National Pike Inn, New Market, MD
Recipe for 2 loaves (Amounts in parentheses for 1 loaf)
1 stick butter (1/2 stick)* 2 eggs (1 egg) 3/4 cup sugar (6 tbsp) 3 ripe bananas (1 1/2 bananas) 2 cups flour (1 cup) 1 teaspoon baking powder (1/2 tsp) 1/2 teaspoon salt (1/4 tsp) 1/2 teaspoon baking soda (1/4 tsp) 3/4 teaspoon cinnamon (heaping 1/3 tsp) 1/8 teaspoon nutmeg (pinch) 3/4 cup butterscotch chips (good quality) (6 tbsp) 2 tablespoons chocolate chips, optional
Preheat oven to 350. Grease 2 (8-inch) loaf pans.
Cream together butter, eggs and sugar. Add bananas. Then add flour, baking powder, salt, baking soda, cinnamon, and nutmeg and blend together. Fold in butterscotch morsels.
Place in pans and bake for 25-30 minutes.
