Chocolate Meringue Cookies Source: Creative Chef Makes 36
6 ounces semi-sweet chocolate chips 2 large egg whites 1/2 cup sugar 1/2 teaspoon vanilla 1/2 teaspoon white vinegar 3/4 cup chopped nuts, optional
Heat oven to 350.
Melt chocolate chips over hot water in double boiler.
Beat egg whites until foamy. Gradually add sugar while continuing to beat egg whites, beating until stiff. Beat in vanilla and sugar. Fold in chocolate and nuts.
Grease cookie sheet and cover with waxed paper or baking parchment. Drop batter, a teaspoon at a time, on sheet, leaving 3 inches between each.
Bake for 10 minutes or until firm to the touch. Remove immediately from sheet. Store in airtight container.
