Crock Pot Minestrone Soup Source: Rival Crock Pot Book Servings: 6 to 8
1 medium onion, chopped 2 medium carrots, thinly sliced 2 stalks celery, 1/2-inch dice 1 medium red bell pepper, seeded, 1/2-inch dice 1 medium zucchini, sliced 1/4-inch thick 2 cloves garlic, minced 2 cans (14 1/2 oz each) vegetable broth 1 (28 oz can) can crushed tomatoes 2 cans (15 1/2 oz. each) kidney beans, drained 2 tsp dried marjoram 1/4 tsp coarsely ground black pepper 1 1/2 cups cooked rice
Add all ingredients except the rice to Crock-Pot.
Cover; cook on Low 8 to 10 hours or on High 4 to 5 hours.
Add the cooked rice and stir to combine.
