Zucchini Bread or Muffins
3 eggs 1 cup oil 2 cups sugar 2 cups grated zucchini 3 tsp. Vanilla 3 cups flour 1 tsp. Salt 1 tsp. Soda 3 tsp. Cinnamon 1/2 tsp. Baking powder 1 cup chopped nuts
Beat eggs until light and fluffy. Add oil, sugar, zucchini, and vanilla, mix lightly, but well. Mix nuts in the flour and add remaining ingredients and mix well. Pour into 2 greased 9X5X2 Loaf pans.
Bake 325F for one hour or until tests done. Remove from pan and cool on rack.
Double batch makes 4 disposable loaf pans and one 6 inch round. Double batch makes 48 muffins. Bake 35 minutes.
