Tex-Mex Cheddar Turkey Burgers with Caramelized Onions Yield: 4 burgers
Burgers: 1 pound ground turkey 1 tablespoon chili powder 1 teaspoon ground cumin 1 small red onion, chopped 1/4 cup cilantro leaves, whole, chopped 1/4 cup chipotle chiles canned in adobo, minced 1 cup grated lowfat cheddar cheese, for topping
Caramelized Onions: 2 tablespoons olive oil 2 large onions, very thinly sliced 1/4 teaspoon salt 1/4 teaspoon coarsely ground black pepper 1/4 cup beef broth 1/2 cup barbecue sauce 2 tablespoons balsamic vinegar
For burgers: In large bowl, gently combine all ingredients except cheese, using your hands. Form into 4 patties, each 3/4-inch thick.
Lightly oil grill or a skillet over medium-high heat and cook the burgers to desired degree of doneness, at least medium, 4-6 minutes per side.
For the onions: Heat the olive oil in a large skillet over medium-high heat. Add onions, salt, and pepper and cook, stirring often, until onions are browned, 7-10 minutes. Add broth, barbecue sauce, and vinegar. Reduce heat to low and simmer until the sauce thickens, about 15 minutes.
Top the burgers with Caramelized Onions and the cheese, wrapped inside a warm flour tortilla.
NOTES: Excellent! Served on toasted croissants. The onions/sauce is wonderfully tasty and really makes this dish.
