Hot Water Sponge Cake Source: Possum Kingdom Lake Cookbook
1 1/2 cups sifted cake flour 1 1/2 tsp baking powder 1/2 tsp salt 1 cup sugar 6 Egg yolks; beaten well until thick and lemon colored 1/2 cup boiling water 1 tsp lemon extract
Sift flour once, measure, add baking powder and salt, and sift together three times.
Add sugar gradually to egg yolks, mixing thoroughly. Add water, then flour and lemon extract, beating well.
Bake in ungreased tube pan in slow oven (350 degrees) 45 minutes. Remove from oven and invert pan 1 hour, or until cold.
