Potatoes Ranchero rec.food.recipes/Jolynn Perkins/2003
1/4 cup butter or margarine 1/4 cup flour 2 cups milk 1 tsp salt 1/4 tsp pepper 3/4 cup chopped green onions 1 (8-oz) wedge Cracker Barrel Brand Sharp Natural Cheddar Cheese, shredded 6 cups sliced, cooked potatoes 1 green pepper, cut in rings 1/2 cup Barbecue sauce
Make cream sauce with butter, flour, milk and seasonings. Add onions and cheese; stir until cheese is melted.
Alternate layers of potatoes and cheese sauce in a 12x8-inch baking dish. Top with green pepper rings and Barbecue sauce.
Bake at 350 degrees, 25 to 30 minutes.
