Mexican Potatoes Great with barbecue!
4 to 5 medium potatoes 1/4 cup finely chopped onions 1/2 cup half & half 1/4 cup chopped pimentos 1/4 cup chopped green peppers 1 cup mayonnaise 1 teaspoon salt 1/2 teaspoon black pepper 1/2 cup grated American cheese Topping: 1/2 to 3/4 cup of grated American cheese 1/2 cup chopped green and black olives Boil potatoes; peel, cool, and slice medium thick. Combine onions, pimentos, green peppers, half & half, mayonnaise, salt, pepper, and cheese. Pour over potatoes and mix thoroughly. Butter bottom and sides of a shallow 9x13 baking dish. Place potato mixture in dish. Sprinkle top with cheese and olives. Bake in 375°F. oven for 20 to 25 minutes. Serves 6.
