Barbara's Cucumbers
5 cucumbers 3 hot red peppers OR 1 jalapeno, seeded and rinsed 1 (3-inch) piece fresh ginger, grated 3 tablespoons sugar 3 tablespoons vinegar
Peel cucumbers; discard centers; cut into 2-inch long sticks.
Cut peppers and discard seeds; shred or mince.
Mix ginger, vinegar, sugar, and peppers. Pour over cucumbers and let set for at least 4-6 hours before serving. Marinate in refrigerator overnight for best flavor.
