Cranberry Apple Crisp
3 cups chopped peeled tart apples 2 cups fresh or frozen cranberries 1 cup sugar 3 Tbsp all purpose flour 1 cup oats (I used the quick cooking kind) 1/2 cup chopped pecans 1/2 cup packed brown sugar 3 Tbsp melted butter or margarine
In a large bowl, combine cranberries, apples, sugar and flour; spoon into a 2-qt baking dish coated with nonstick cooking spray.
Combine oats, pecans, brown sugar and butter, and sprinkle over apple mixture.
Bake at 350 for 35-40 minutes or until top is golden and filling is bubbly. Serve warm with ice cream!
Makes 9-10 small servings or about 6 large ones.
This recipe came from Light & Tasty Feb/Mar 04, and originally called for crushed cornflakes instead of oats. I tried it both ways and like it muchy better with oats, and I also omitted the pecans as DH doesn't like nuts. I baked mine in a 8x8 dish and it worked just fine. It was so yummy!
