Minty Cucumber Salad Servings: 4
1 cup yogurt, non-fat, plain 2 large cucumbers 1 tablespoon lemon juice 1 clove garlic, minced 1 mint to taste, fresh, chopped 1 salt to taste 1 as needed black pepper, freshly cracked
Peel and seed cucumbers by slicing them lengthwise and scooping out the pulp. Cut them into thin slices, and set aside.
In a medium sized bowl, combine the yogurt, lemon juice and garlic. Add the cucumber slices and stir to coat evenly. Add the mint, salt and pepper to taste. Chill for an hour to allow the flavors to blend before serving.
